Avocado-Egglicious Toast

Avocado is a fiber-powerhouse. One avocado has about 9 g of beneficial fiber that your gut is just waiting to soak right up. It is completely versatile and deserves a place on your pantry. For this simple 5-minute recipe, you are simply adding layers to toast of your choosing. It goes toast, then avocado, and then egg.

Ingredients
  

  • 1/4 avocado
  • 1/4 tsp ground pepper
  • 1/8 tsp garlic powder
  • 1 large egg (scrambled or fried)
  • 1 tbsp sliced scallion (optional)
  • 1 tbsp cilantro
  • 1 drizzle of siracha

Instructions
 

  • First, either scramble or fry your egg.  Whiever way you prefer.  A fried egg will neatly sit on top of you avocado toast, while a scrambled egg might not as much.
  • While that's cooking, combine the avocado, garlic powder, cilantro (optional), and black pepper in a bowl.  Mash all the ingredients together.
  • Drizzle some siracha over your avocado-egg toast for some extra kung-pow if you'd like!
